Looking for something else to do with your favourite gin? Why not try making a gin and tonic cake for a special occasion?
This delightful recipe combines the two classic flavours into a delicious cake that is sure to be a hit with your guests!
To make this cake, you will need
-1 cup (250 ml) gin (Murray and Yeatman Gin, obviously!)
-1 cup (250 ml) tonic water
-1/2 cup (125 ml) vegetable oil
-4 eggs
-2 cups (250 g) self-raising flour
-1 cup (250 g) caster sugar
-1 tablespoon (15 ml) baking powder
-1 teaspoon (5 ml) ground ginger
Preheat the oven to 350 degrees F (180 degrees C). Grease and flour a 9×13 inch baking pan.
In a large bowl, combine the gin, tonic water, oil, and eggs. Mix well.
In another bowl, whisk together the flour, sugar, baking powder, and ginger. Add this to the wet ingredients and mix until everything is well combined.
Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick or cake tester inserted into the centre comes out clean.
To finish the cake, you could always add a gin and tonic drizzle to it; simply dissolve some sugar into a gin and tonic and drizzle generously over the cake – delicious!
